Manuel Baima Besquet’s Expertise My career started when i was 16 and i joined my brother and sister in the Family business bakery and pastry developing my love for baking ,after 5 years of baking with them i decide to have a new experience to improve my skills and i moved to Venezia and start to work with Andrea Zanin member of the Italian academy of Masters Pastry and Rele’ Dessert where i learnt classic and modern pastry , chocolate works,the usage of sourdough for preparation like Panettone and so on,after that,i decidd to have a restaurant experience to explore also that world working with Michelin Star Chef (Luca Landi at Restaurant Lunasia in Tuscany,Chef Andrea Berton at Trussardi alla Scala in Milan) and others prestigious Hotels and restaurant. Following the passion for travel i worked all around Italy,Spain,Australia,Indonesia,Singapore as a consultant for new opening restaurant. In 2013 i moved to Dubai with Marcello Rivetti under Bice International as Head Pastry Chef . In Dubai i was awarded from magazine Time Out Dubai for my Cinnamon Rolls as a Best 50 bites in 2014,in the same year I was selected for the first edition of Caterer Chefs Book Recipe where are annovered 70 Top Chef’s of Dubai, with my dessert “La Perla Nera” The Black Pearls dedicated at the story of Dubai.... City of Pearls. In november 2015 at the Italian Cuisine World Summit I won the Gelato World Chef's Cup. In October 2016 with Enrico Derflinger president of Euro Toques Italia i moved to Taipei as Executive Pastry Chef for a new project “Il Mercato” where i was involved in the Pastry Kitchen layout and equipment selection.During this time we opened nine different locations including Fine Dining,Pizzeria &casual restaurant ,Banquets restaurant,wine bar. In January 2020 I joined Skelmore Hospitality Group as a Group Executive Pastry Chef January 2021 I joined Unigra’ as Technical Support Specialist
